    Strawberry Protein Pancakes make the perfect balance morning breakfast!

    I don't know about you, but the last thing I think about before going to bed is, what will I eat for breakfast? I can eat breakfast all day everyday (maybe that's excessive, but some weeks I can totally do that). Specially these  protein pancakes.

    One of my go to breakfast meals has to be pancakes, but not just plain old pancakes, I'm talking about protein pancakes. A fews years back I think I had protein pancakes almost everyday for an entire year! at least 300 times (but, who's counting?). The reason Protein Pancakes have been my favorite breakfast meal for a long time is because its a great balanced meal (eggs, oats and fruits) that will keep you full for a few hours. The best part about these pancakes is how quick they are to make. A quick and easy meal? Count me in!

    Ingredients
      

    Batter

    • ½ Medium Banana
    • 2 Large Strawberries
    • ½ cup Oats
    • 1 tablespoon Plain Greek Yogurt
    • 1 tablespoon coconut sugar (or any natural sweetener of choice)
    • ½ teaspoon Cinnamon
    • 1 whole egg
    • 2 egg whites

    Strawberry Syrup

    • 1 Cup Chopped Strawberries
    • ½ Cup Water
    • ¼

      teaspoon Corn starch
    • 3 tablespoon Natural sweetener
    Prevent your screen from going dark

    Instructions
     

    • Place batter ingredients in a blender and blend until smooth. Batter normally makes 2 large size pancakes or you can make 4 small ones. Pour batter into skillet and cook each side in medium heat for about 5 minutes.
      For the syrup: Place chopped strawberries, corn starch and natural sweetener in a small sauce pan, dissolve corn starch with water and strawberries. Once it starts boiling turn off the heat. Let it cool down for a few minutes and pour over pancakes.
      Optional: Top over with handful of walnuts
