Some weekends fly faster than others and this one definitely flew by. To add to things, I always seem to have a case of the Monday's; it never fails... This last weekend I had a really busy Saturday doing some freelance makeup. First, had to do my friend's makeup a 6:30 am, who was competing in her first NPC Bikini Competition, and right after I had to drive to my other friend's location for some bridal party makeup. So, last Thursday I knew I had to prep something quick and easy to eat in between makeup appointments for the coming Saturday. I knew I didn't want to bring a protein shake with me because they never fill me up and I knew I needed something with more substance. Soooo protein brownies it was!
I enjoy healthy baking, I used to do it more often a few years ago, but now I just do it when I know I have super busy week ahead. Protein brownies make the perfect snack and are pretty tasty for being guilt-free. They sure came in handy last Saturday, while I was cleaning my makeup brushes in between makeup appointments. Even though I scarfed them down with water, they still tasted really good and hit my hunger spot.
- 2 scoops of vanilla whey protein
- 1 c oat flour (or you can blend rolled oats in the blender)
- ¼ cup of natural sweetener ( I used baking stevia)
- ¼ teaspoon salt
- ½ teaspoon baking soda
- 3 tps cocoa powder
- ½ c almond milk (or milk of choice)
- 2 eggs
- 1 teaspoon vanilla
- ½ c unsweetened apple sauce
- 2 tablespoon peanut butter
- ¼ c crushed pecans
- 1 teaspoon cinammon
- Handful of chocolate chips ( I used 60% cacao chips)
- Whisk whey protein, oat flour, natural sweetener, salt, baking soda, cocoa powder, and cinnamon in a large mixing bowl
- Add milk, eggs. apple sauce, peanut butter, vanilla and crushed pecans to dry ingredients and whisk together until completely smooth. If the batter is too thick add 1 tablespoon of almond milk.
- Pour batter into an oil sprayed baking dish. I used an 8x8 pirex dish and then sprinkle some chocolate chips (optional) to the batter and bake on 350 F for 20-25minutes.
These protein brownies are super easy to make, are protein packed, and full of chocolaty nutty flavors from peanut butter and crushed pecans. They were so yummy that I ate them all within 2 ½ days, Oops... As easy they are to bake they are to eat! I love healthy baking because I can indulge guilt-free. This recipe is a chocolaty winner.
