    Zucchini Fritters

    These Zucchini fritters are flavorful, simple to make, and a perfect way to sneak some veggies to your meals. Zucchini fritters make a great appetizer and side dish! Have extra zucchini lingering around? Zucchini fritters make the perfect snack or side to your favorite dish. They are kid friendly and perfect to sneak those unloved veggies into their meals. They are soft on the inside with crispy edges that will make you crave more and more. You can eat these alone or dip them in a simple yogurt sauce.

    Ingredients you'll need:

    Zucchini is the main ingredient of this recipe
    Parsley adds that freshness taste to the fritters
    White onion or yellow onion are my favorite for this recipe but any onion will work.
    Egg lightly beaten egg helps the mixture hold together
    Flour all purpose flour help bind the mixture together
    Freshly grated parmesan - adds that extra yummy ingredient
    Spices, pepper, garlic powder, and kosher salt

    How to makes these easy fritters:

    Step 1

    Grate zucchini with a box grater. Remove as much moisture from the zucchini as possible, this will help make your fritters have a nice crisp to them. Place grated zucchini in a coriander and add salt. Salt will absorb much of the moisture. Let it sit for at least ten minutes and squeeze any moisture that is left with paper toper or cheese cloth. You can also place grated zucchini on a few layers of clean paper towels (or cheese cloth) and squeeze as much of the moisture out. (this is my prefer method when i'm short on time) You might go through a few paper towels while doing this, since so much moisture will soak through the paper towels and cause them to tare.

    Step 2

    In a large bowl add onion, fresh parsley, parmesan, egg, flour, garlic pepper and salt and combine

    Step 3

    Add in the shredded zucchini to the bowl with all ingredients and combine

    Step 4

    Heat oil in a pan on medium-high heat and working in batches scoop 2 tablespoons of the mixture to the pan and flatten with a spoon.

    Step 5

    Cook each side for 3-4 minutes until golden brown and transfer to a plate with paper towel, so the excess oil is absorb.

    Serve and enjoy immediately for the best tasting zucchini fritters!

    Substitutions:

    Make them Gluten Free:

    You can make these gluten free by substituting all purpose flour with oat flour. Don't have oat flour on hand? You can simply add old fashion oats to a high speed blender or food processor to make oat flour.

    Storage, reheating and freezer tips:

    These taste best when freshly cooked. But, you can store these in the refrigerator in an airtight container for up to 3 days. Or you can freeze them in a freezer bag or airtight container for up to 3 months.

    Serving suggestions for zucchini fritters:

    These go well with a dipping yogurt sauce, with some freshly squeezed lemon, as a side dish with your favorite meal, or simply you can just snack on these on the go.

    Ingredients
      

    • 2 small zucchini, grated (about 2 cups)
    • ¾ cup of finely chopped white onion
    • ¼ cup finely chopped fresh parsley
    • ¼ cup grated parmesan cheese
    • 1 egg, lightly beaten
    • ⅓ cup all purpose flour
    • ½ teaspoon black pepper
    • 1 teaspoon garlic powder
    • ½ teaspoon salt
    • 2 tablespoon olive oil (more as needed)

    Instructions
     

    • Place grated zucchini in clean dish towel or paper towels and squeeze as much of excess liquid from zucchini *
    • In a large bowl mix in onions, parsley, cheese, flour, egg, garlic powder, pepper and salt
    • Stir in zucchini and mix all ingredients together
    • Heat olive oil in medium frying pan in medium-high heat
    • Add about two tablespoons of batter to the pan and flatten with spoon or spatula
    • Cook each side 3-4 minutes or until golden brown
    • Place fritters on plate with paper towel, so excess oil is absorb
    • Ready to serve!

    Notes

    *You can also use a cheese cloth to get the excess moisture from the grated zucchini

    Why are my fritters falling apart? The mixture is too wet. Make sure you are removing all excess moisture from the zucchini.

    Why are my zucchini fritters not crispy? Make sure you are removing as much moisture from the grated zucchini .

    Can I make these gluten-free? yes, you can replace the all purpose flour with gluten-free flour

    Can I bake these fritters? Yes, bake in the oven on 400 F for 15-20 minute or until golden brown, make sure you keep an eye on them so they do not over cook.

    Zucchini fritters for babies? Yes, these are perfect meal or snack if you are doing BLW, my 8 month old devours these!
