A few pantry staples I always make sure I have on hand are, garlic powder, onion powder, parsley flakes, and paprika. The combination of these spices adds a nice touch to these tuna patties. In addition, I always make sure to have plain panko on hand, not only for this recipe, but also to use in meatballs!
To add an extra citrus punch, squeeze lemon juice on top of the patties and serve. No lemon? no worries, these taste just as good without the lemon.
Refrigerator Staples: I always make sure to have eggs, spicy mayonnaise, and mustard in the fridge. These key ingredients are what give these patties their moisture.
Ingredients You'll need:
- Tuna
- plain panko
- egg
- mustard
- spicy mayo
- Spices paprika, onion powder, garlic powder and salt
- Olive oil

Step-by-Step Instructions:
- Drain water from tuna cans: Place tuna in a medium mixing bowl and shred with fork
- Beat egg on a separate small bowl, then stir into the tuna bowl
- Add panko crumbs and all spices to the bowl and mix with a fork
- Add mustard and spicy mayo and combine
- Shape the patties To make these mini patties divide the mixture into 12 parts. Round the mixture into mini balls with your hands and flatten with a spoon. Then place in the frying pan and cook each side four to five minutes until golden brown.
- For more of a burger size patty you can divide the mixture into four parts to make medium size patties. Once cooked place them on a burger bun with your favorite toppings

Recipe Substitutions:
- Don't have panko crumbs? You can substitute with plain bread crumbs
- No spicy mayo? You can use regular mayo and use spicy mustard instead

You can store leftover tuna patties in the refrigerator in an air tight container for up to 3 days. Or store in the freezer for up to 3 months in a freezer bag or air tight container.

Ingredients
- 2 5oz can chunk light tuna in water
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 tablespoon parsley flakes
- ¼ teaspoon garlic powder
- 1 egg
- ½ cup plain panko
- ½ tablespoon mustard *
- 1 tablespoon spicy mayo*
- 2 tablespoon cooking oil (I use extra virgin olive oil)
- kosher salt to taste (I used ¼ tsp)

- 1 lemon (optional)
Instructions
- Drain all water from tuna and put in a large bowl
- Beat egg on a separate small bowl, then stir into the large bowl with tuna
- Add panko and spices to the bowl and stir
- Add spicy mayo and mustard and mix all ingredients together
- Once all ingredients are mixed, form the patties
- Divide the mixture into 12 parts for mini patties and shape tuna mixture into balls and flatten with a spoon to form patties
- Heat cooking oil in a skillet over medium heat and add tuna patties, cook until golden brown on both sides- about 4-5 minutes per side.
- Serve warm *
