If you’re looking for a quick meal, fresh, nourishing and full of flavor, this canned sardine ceviche is it.

If you’re not a fan of sardines, this sardine ceviche might just change your mind. Trust me—I wasn’t the biggest sardine fan either until I started enjoying them ceviche-style. This dish makes the perfect light lunch or refreshing appetizer, and it’s packed with nutrients, bright flavors, and a fresh, zesty kick. My favorite way to enjoy it is with tortilla chips, but it’s just as delicious served with salted crackers, on tostadas, or tucked into crisp lettuce wraps.
Benefits of eating Sardines and why I started eating them
Beyond their flavor, sardines are packed with health benefits—which is exactly why I started adding them to my diet. They’re rich in omega-3 fatty acids, high-quality protein, and essential nutrients like vitamin D and calcium. They’re also low in mercury compared to many other fish, making them nutrient-dense. So, definitely a winner when i'm looking for a quick nutrient-dense meal.
Not quite sold on sardines but still craving something fresh and ceviche-style? You might want to try a delicious crab ceviche instead.
Ingredients for sardines ceviche
- Canned sardines — skinless and boneless, packed in extra virgin olive oil (I like Wild Planet, Patagonia Provisions, or Fishwife). You can also use sardines in water or with lemon—just avoid any that contain added sugar or seed oils
- Cucumber - for that crunch texture - about a ⅓ cup finely chopped
- Red onion - for that extra sharp bite - ¼ cup finely diced
- Tomatoes - any tomato works, roma, cherry ... about ¼ cup chopped
- Jalapeño — half, minced. Keep the seeds for extra heat.
- Ground cayenne pepper—for an extra spicy kick. Add a couple of shakes (about ⅛ teaspoon), or leave it out entirely if you prefer.
- Juice of a lime — a must for a bright, citrusy freshness.
- To taste: kosher salt (I use Diamond Crystal), garlic powder, and pepper
- Cilantro - (optional) chopped, to add a bright, citrusy-herbal freshness

How to make canned sardines ceviche
It’s so easy—just chop all the ingredients and add them to a bowl. Place the sardines on top, then use a fork to gently break them apart and mix everything together. Season with salt, garlic, and pepper, combine well, and enjoy!

Serving suggestions
My favorite way to enjoy sardine ceviche is with sea salt chips—Siete brand is my go-to, especially their grain-free sea salt chips. You can also make your own tortilla chips at home. It’s just as delicious served with tostadas, wrapped in crisp lettuce leaves, or over a bed of chopped lettuce. Honestly, it’s so good you can even enjoy it as a salad on its own.

Variations - Make it your way
Other add-in or substitutions that are great with this ceviche is chopped bell peppers. I like adding red bell pepper, more cucumber, a little more onion - this dish is so forgiving so anything goes. Don't like tomato - leave them out. This recipe serves one which makes the perfect quick meal but the recipe can be double, triple if using as appetizer.
