    Imitation Crab Ceviche

    This imitation crab ceviche is the perfect alternative to shrimp ceviche. This recipe is my go-to during those hot summery days or when I’m feeling like cooking something light, fresh, delicious and a super easy to make. This ceviche is made with fresh ingredients and topped with lime juice that gives it a tangy delicious taste.

    My favorite way to eat crab ceviche is with tostadas, "imitation crab tostadas" also known as “tostadas de jaiba." You can also serve with a side tortilla chips. Imitation crab ceviche tostadas is one of those meals I grew up eating and really enjoyed. Every summer I find myself making this ceviche recipe and this easy Mexican Macaroni Salad on repeat because they are the perfect recipes when you feel like not spending too much time in the kitchen.

    What is imitation crab ceviche

    Is an alternative to traditional shrimp or fish ceviche at a fraction of the cost. Its made with fresh ingredients such as tomato, cucumber, onion, cilantro and lime juice. Since Imitation crab is already pre-cooked it does not need to marinade for hours in lime juice like the traditional shrimp or fish ceviche, which makes this imitation crab ceviche so much quicker to make.

    What you’ll need to make this recipe

    • Imitation crab - The star of this recipe - I used the 14oz package
    • Tostadas - are the perfect pairing for this ceviche
    • Cilantro - a must for that added freshness
    • Tomato - I use a large tomato or you can use 2-3 roma tomatoes
    • Cucumber - I use english cucumbers, but regular cucumbers work too
    • Onion - I use yellow onion, but red or white onion are great substitutions
    • Mayonnaise - to spread over the tostada and give it a yummy taste
    • Garlic salt - for added flavor
    • Lime - to give it that tangy taste
    • Hot sauce - I love using Tapatio hot sauce or this red salsa recipe for that extra spicy kick

    How to prepare imitation crab ceviche recipe

    Start by chopping the imitation crab into small pieces and set aside in a large bowl. You can also just tear with your hands into pieces, whatever is easier for you. Then chop the remaining toppings; tomato, onion, cucumber, and cilantro and add to the large mixing bowl.

    Combine all the ingredients together and sprinkle garlic salt, I use about ½ teaspoon and combine. Once combined you can squeeze the juice of a couple limes, but I like to squeeze a lime wedge right before serving. You can do either or.

    Prep your imitation crab tostadas: spread a thin layer of mayonnaise on the tostadas and add the imitation crab ceviche (about 3 tablespoons) evenly on the tostada, squeeze juice of a lime wedge on top and add your favorite hot sauce or salsa (optional)

    Serving suggestions

    Crab ceviche is best served with tostadas or tortilla chips. You can definitely make your own tostadas or tortilla chips at home, but If you are going for quick and easy meal then store-bought is the way to go. If you are serving this as a meal then definitely use tostadas. To serve as an appetizer then tortilla chips is a better option to pair this imitation ceviche with.

    Substitutions and Variations

    Make it spicy- Mix in one to two minced jalapeño pepper
    Avocado - Mix in chopped avocado
    Mayonnaise - Want to skip the mayo on the tostada? These tostadas taste just as good without the mayo.

    Storage suggestions

    Imitation crab ceviche can be stored in an airtight container in the refrigerator for up to 3-5 days.

    Imitation Crab Ceviche

    Imitation crab ceviche is the perfect alternative to shrimp ceviche. This ceviche is made with fresh ingredients and topped with lime juice that gives it a tangy delicious taste. Serve as an entree with crunchy tostadas or as an appetizer with tortilla chips.

    Ingredients
      

    For the ceviche

    • 14oz imitation crab
    • 1 large tomato (chopped)
    • 1 cucumber (chooped)
    • 1 yellow onion (chopped)
    • ½ cup cilantro (finely chopped) (finely chopped)
    • 2-3 limes (juice of a lime)
    • ½ teaspoon garlic salt

    Tostadas

    • 10-12 tostadas
    • mayonnaise
    • hot sauce * (optional)
    • lime wedges

    Instructions
     

    • Start by chopping the imitation crab into small pieces and set aside in a large bowl. Chop the remaining toppings; tomato, onion, cucumber, and cilantro and add to the large mixing bowl.
    • Combine all ingredients and stir in garlic salt *see note 1
    • Ensemble the tostadas - add a thin layer of mayonnaise to the tostadas and top with imitation crab ceviche, juice of a lime wedge and hot sauce

    Notes

    Note 1: In step 2 you can add the juice of 2-3 limes to the large bowl and combine or wait to squeeze the juice of a lime wedge over the imitation crab ceviche tostadas and serve. (This is how I normally do it. I squeeze the lime juice right before serving)
    Hot sauce: My go to hot sauce for these tostadas is Tapatio sauce or you can use your hot sauce of choice. I also like to use this homemade red salsa.
