One of the things that we miss from living in San Diego, besides the amazing beaches, is a good California breakfast burrito. If you have ever been or live in San Diego and had a mouth-watering California Breakfast Burrito from the local taco shops like, Albertos, Adalbertos, Rigobertos or any shop that pretty much ends with "tos," then you know what I'm talking about. They are not your fanciest food joints, but they sure know how to make some good food that hits the spot. Cali Breakfast burritos from the local taco shops are sooo good, specially grabbing one or two to-go on those super late nights or on early mornings, yum!

What is a California Breakfast Burrito
A burrito filled with cheesy scrambled eggs, french fries, bacon and ham and smothered in Mexican salsa. Truly the best combination of toppings in a burrito.
Ingredients you'll need to make this burrito
- Eggs - you can do egg whites or whole eggs. If doing egg whites do six eggs.
- Burrito size flour tortillas - the star of this recipe
- Ham - chopped thick ham or deli thin style work here
- Bacon - can't forget about the bacon, crispy bacon is the best
- Cheddar cheese - for that cheesy goodness
- French fries - frozen or homemade fries, but store bought frozen fries is my go-to here.
- Salt and pepper for some flavor
- Salsa - to give it that heat factor. I like using this homemade red salsa, but any store bought salsa will work here.
How to make a California style breakfast burrito
Start by heating frozen french fries per packaging cooking instructions. Beat the eggs in a medium bowl. Add in a ¼ cup of cheese, splash of milk and salt and pepper and whisk until combined.
In a medium size skillet spray cooking spray and heat ham for a couple minutes and set aside. Add more cooking spray and pour in egg mixture, in medium high heat and scramble the eggs for a few minutes until no longer watery.
Stir in ham and set aside. Heat a griddle or large skillet big enough for the flour tortilla and heat flour tortilla, pour the cheese and heat until cheese has melted. You can also add tortilla with cheese in the microwave for 30-40 seconds. Transfer tortilla to a plate. Add the filling, eggs, bacon, handful of fries and salsa.
Fold over the sides and roll up. To add that crispy golden outer layer I like to return to the pan or griddle for a couple more minutes on both sides. This is optional, but really adds that final touch. You can serve with more salsa on the side.
Recipe Variations and Substitutions
There are different variations of the California breakfast burrito out there. Burritos are so versatile and you can add all the toppings. You can add guacamole and sour cream to give it that extra creaminess and fullness. For extra protein I like adding a couple spoonfuls of black refried beans. If you are out of ham or bacon you can just do either or.
Salsas - You can use any salsa of choice. My go to is this easy red salsa but also love using this green tomatillo salsa.
To make it a healthier burrito you can do egg whites instead. For 2 burritos I do six egg whites, one slice of turkey bacon per burrito followed by all the ingredients.
Storage tips
You can store breakfast burritos in the refrigerator in an air-tight container or wrapped in foil for up to 3 days and re-heat in the microwave for 1-2 minutes.
Can you freeze breakfast burritos? Yes, once cool down you can wrap in foil and place them in a zip-top bag removing all the air from the bag and freeze up to 3 months. Once ready to eat you can thaw the night before in the refrigerator and heat in the microwave for about 1-2 minutes. You can also heat frozen for 2-3 minutes. If freezing I would recommend leaving out the salsa to prevent from getting soggy.
California Breakfast Burrito
Ingredients
- 2 large burrito size flour tortillas
- 4 eggs
- ¼ cup, chopped ham
- 4 strips of bacon (2 per burrito)
- ¾ cup cheddar cheese (separated)
- salt and pepper to taste
- Homemade salsa (search archives for Spicy Mexican Red Salsa) (or store bought)
- Handful of frozen french fries per burrito (Heat per package instructions)
Instructions
- Bake the frozen fries according to package instructions, while you are prepping everything else
- Cook bacon on skillet, for about 5 minutes each side or until crispy and set aside (You can also air fry the bacon for 10-12 minutes on 350 degrees)
- In a medium size skillet heat chopped ham in medium heat for a couple minutes and set aside
- In a medium bowl whisk the eggs, ¼ cup cheddar cheese, splash of milk (optional) salt and pepper until combined
- Spray non-stick skillet with cooking spray and heat over medium heat and pour egg mixture, scramble the eggs for a few minutes until no longer watery, once eggs are done stir in the ham and set aside
- Warm flour tortillas on a griddle or large skillet with ¼ cup cheese per tortilla. Once cheese has melted transfer tortilla on a plate. Make sure tortilla does not get too crunchy, otherwise it will be hard to fold and roll * see note 1
- Add the filling to each flour tortilla: eggs, fries, bacon, and salsa.
- Fold into burrito form. Fold top and bottom toward the middle and bring the sides in and roll up. Top with more salsa and serve.
Notes
This is my go-to recipe when I don't know what to make for dinner. It's always a winner in our household. It's easy to make and so quick to put together on those busy nights. Cali breakfast burritos really are the best.

Thanks Beverly! I use La Banderita Flour Tortillas (extra large) I found in the Hispanic/International aisle of my grocery store, I think some Target's also carry them.
