    Easy Pumpkin Granola

    Hello mid November! Wow, seriously where have I been? Holiday season is just around the corner! Is it still pumpkin season? I’ve been absent from the food blogging world for a few weeks now.  A lot of things have happened since my last post in early September. After almost three years of living in Charlotte, we packed our stuff and Cali (our cat) and moved to the Big Apple.   These last few weeks I’ve been super busy adjusting to our new studio apartment, work, and life in NYC.  But I’m super excited to start our new adventure in NYC. I’ve always wanted to live here and awesome opportunities have brought us here. Now that we are all settled in our nice cozy studio I can find some time to get creative in the kitchen AND share some of our favorite places in the city, which we already have a few. But, in the meantime… before moving to NYC, I was on a pumpkin everything binge in Charlotte. One of the recipes I was loving was this Easy Pumpkin Granola.

    I’ve made two batches of this granola within the last week. It makes our studio smell so cinnamon-y and pumpkin-y. This pumpkin granola is simple, delicious, not too sweet, and with a nice chocolatey pumpkin kick. My favorite way to eat my granola is with plain Greek yogurt for that added crunch and sweetness. I’ve never made granola until just recently. After experimenting making homemade granola, I’ve become obsessed.  It took me a few tries to get it right, but this one is a winner.

    The first couple of times I tried making granola, it turned out too soft and was missing that crunch. What worked for me was baking the granola for 15 minutes remove it from the oven, stir, and repeat. Let it bake for 10 minutes each time at least two more times after the first, then let it cool down. All ovens work differently, so I would suggest checking your granola carefully and make sure it does not burn. Once the granola has cool down, enjoy!

    Easy Pumpkin Granola

    Easy Pumpking Granola that is not too sweet and is guilt-free. This granola makes the perfect breakfast and snack.

    Cook Time 35 minutes mins
    Total Time 45 minutes mins
    Course Snack
    Servings 2 cups

    Ingredients
      

    • ¼ C Pure Pumpkin

    • ¼ C Coconut Oil

    • 1 teaspoon Vanilla Extract

    • ¼ C Agave Nectar

    • 1 teaspoon Cinnamon

    • 1 tablespoon + 1 teaspoon Baking Truvia

    • 1 tablespoon unsweetened cocoa

    • ¼ teaspoon salt

    • 2 cups Rolled Oats

    Prevent your screen from going dark

    Instructions
     

    • Preheat the oven to 325 degrees.
    • Combine first eight ingredients in a large bowl
    • Add oats and combine with wet ingredients
    • On a cookie sheet spread the granola evenly
    • Bake for 15 minutes
    • Remove the cookie sheet from the oven and stir the granola
    • Bake for another 10 minutes
    • Take out the cookie sheet and stir the granola again
    • Bake for last 10 minutes
    • Remove the granola from the oven and let it cool down
