Imitation crab ceviche is the perfect alternative to shrimp ceviche. This ceviche is made with fresh ingredients and topped with lime juice that gives it a tangy delicious taste. Serve as an entree with crunchy tostadas or as an appetizer with tortilla chips.
Start by chopping the imitation crab into small pieces and set aside in a large bowl. Chop the remaining toppings; tomato, onion, cucumber, and cilantro and add to the large mixing bowl.
Combine all ingredients and stir in garlic salt *see note 1
Ensemble the tostadas - add a thin layer of mayonnaise to the tostadas and top with imitation crab ceviche, juice of a lime wedge and hot sauce

Note 1: In step 2 you can add the juice of 2-3 limes to the large bowl and combine or wait to squeeze the juice of a lime wedge over the imitation crab ceviche tostadas and serve. (This is how I normally do it. I squeeze the lime juice right before serving)Hot sauce: My go to hot sauce for these tostadas is Tapatio sauce or you can use your hot sauce of choice. I also like to use this homemade red salsa. This recipe makes 10-12 tostadas
