2 small zucchini, grated
(about 2 cups)
¾ cup of finely chopped white onion
¼ cup finely chopped fresh parsley
¼ cup grated parmesan cheese
1 egg, lightly beaten
⅓ cup all purpose flour
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon salt
2 tablespoon olive oil

Instructions
Place grated zucchini in clean dish towel or paper towels and squeeze as much of excess liquid from zucchini *
In a large bowl mix in onions, parsley, cheese, flour, egg, garlic powder, pepper and salt
Stir in zucchini and mix all ingredients together
Heat olive oil in medium frying pan in medium-high heat
Add about two tablespoons of batter to the pan and flatten with spoon or spatula
Cook each side 3-4 minutes or until golden brown
Place fritters on plate with paper towel, so excess oil is absorb
Ready to serve!
Notes
*You can also use a cheese cloth to get the excess moisture from the grated zucchini
