California Breakfast Burrito

California Breakfast Burritos are filled with french fries, ham, bacon, eggs, cheese and topped with homemade salsa. Ready in 25 minutes. Perfect for breakfast, brunch or dinner!

Ingredients
  

  • 2 large burrito size flour tortillas
  • 4 eggs
  • ¼ cup, chopped ham
  • 4 strips of bacon (2 per burrito)
  • ¾ cup cheddar cheese (separated)
  • salt and pepper to taste
  • Homemade salsa (search archives for Spicy Mexican Red Salsa) (or store bought)
  • Handful of frozen french fries per burrito (Heat per package instructions)

Instructions
 

  • Bake the frozen fries according to package instructions, while you are prepping everything else
  • Cook bacon on skillet, for about 5 minutes each side or until crispy and set aside (You can also air fry the bacon for 10-12 minutes on 350 degrees)
  • In a medium size skillet heat chopped ham in medium heat for a couple minutes and set aside
  • In a medium bowl whisk the eggs, ¼ cup cheddar cheese, splash of milk (optional) salt and pepper until combined
  • Spray non-stick skillet with cooking spray and heat over medium heat and pour egg mixture, scramble the eggs for a few minutes until no longer watery, once eggs are done stir in the ham and set aside
  • Warm flour tortillas on a griddle or large skillet with ¼ cup cheese per tortilla. Once cheese has melted transfer tortilla on a plate. Make sure tortilla does not get too crunchy, otherwise it will be hard to fold and roll * see note 1
  • Add the filling to each flour tortilla: eggs, fries, bacon, and salsa.
  • Fold into burrito form. Fold top and bottom toward the middle and bring the sides in and roll up. Top with more salsa and serve.

Notes

Note 1: You can heat flour tortilla with cheese in the microwave for about 30 seconds if you want to skip heating on the stovetop.
Ham: thick or thin deli ham work here.
You can replace bacon with turkey bacon to make them a little healthier. If you have no bacon or ham on hand these taste just as good with either or and rest of the ingredients.
You can do 6 egg whites instead of 4 whole eggs.
You can store breakfast burritos in the refrigerator in an air-tight container or wrapped in foil for up to 3 days and re-heat in the microwave for 1-2 minutes.
You can freeze breakfast burritos wrapped in foil in a zip-top bag up to 3 months.
Salsa: You can do mild or spicy salsa. Or if salsa is not your thing you can leave out.
