Instant Pot Shredded Chicken

Instant pot shredded chicken is so flavorful, tender, very simple to make and comes together quickly. Perfect for meal prepping and many quick meals for the entire week.

Equipment

  • Instant Pot 6 qt

Ingredients
  

  • 1 lb thighs (or chicken breast)
  • ¾ cup low sodium chicken broth
  • ½ teaspoon kosher salt
  • ½ teaspoon chili powder
  • ¼ teaspoon black pepper
  • ½ tablespoon of parsley flakes
  • ¼ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

  • Add chicken thighs to instant pot
  • Add chicken broth and all ingredients to the instant pot
  • Set instant Pot to manual mode on high pressure for 10 minutes
  • Let pressure natural release for another 10 minutes - after the ten minutes release the remaining excess pressure
  • Transfer the chicken to a plate or bowl and shred with two forks
  • Ready to serve!

Notes

Cooking this in the slow cooker instead ? Cook on low heat for 7-8hrs or on high heat for 5hrs
Using the stovetop instead? Place all your chicken in a large saucepan, stockpot or dutch oven, then cover with chicken broth and top with water. Add all ingredients to the pot and cook on medium high heat bringing to a boil. Once it starts boiling lower the heat and let it simmer for about 25 minutes or until chicken reads 165°F on thermometer. Let it cool down and transfer to a bowl and shred with two forks or your hands.
