Start your mornings with this easy traditional Mexican café de olla (spiced coffee). Café de olla is made with cinnamon sticks, piloncillo and ground coffee.
Add 2 cups of water in a small saucepan with a cinnamon stick and piloncillo and cover with lid and heat in medium high heat.
Once the water is boiling and piloncillo has dissolved remove from heat and stir in ground coffee, cover with lid and steep for 5 minutes.
Discard cinnamon stick and using a double mesh strainer strain coffee into a large cup and serve hot.

Piloncillo - To easily cut a small piece of piloncillo just place the cone in the microwave for about 20-30 seconds to soften and make it easier to cut with a knife.Variations - other café de olla versions are spiced with additional ingredients like star anise, orange peels and whole clovesBrown sugar - If you can't find piloncillo, 2 tablespoons of brown sugar is a great substitute.
