Mexican Green Spaghetti

This Mexican spaghetti verde is a must try! It's rich and creamy made with poblano and bell peppers, cilantro, Mexican crema and cream cheese. The flavors are so delicious, savory and makes the perfect dinner.

Ingredients:

Spaghetti  Poblano pepper  Green bell pepper  Cream cheese  Mexican cream  Cilantro  Garlic clove  Onion slices Kosher salt or garlic salt Milk  Topping: Crumbled cotija or queso fresco For complete recipe go to recipe link below!

Step 

Cook spaghetti pasta per package instructions. Roast the green bell pepper and poblano pepper. Then remove charred skin, stems and seeds.

Step       Make the salsa

Place the poblano, green bell pepper, cilantro, cream cheese, Mexican crema, salt and garlic clove in a blender and blend until smooth and set aside.

Step  Heat a large deep skillet in medium high heat with 1 tbsp of butter and a few slices of onion and fry until onion is soften. Add in the green sauce until it starts to bubble up and lower the heat to a simmer

Step 

Stir in the cooked spaghetti pasta and gently combine with the sauce until fully coated, add more salt if needed and simmer for 5 more minutes and serve!
