Enmoladas  (mole enchiladas)

Enmoladas are made with fried corn tortillas filled with delicious shredded chicken, crumbled queso fresco and coated with a savory mole sauce

Ingredients you need:

– tortillas – Doña María mole paste – queso fresco  – shredded chicken – cooking oil – sesame seeds – chicken broth –  onion

Step 

Prepare the delicious mole paste with chicken broth

Step 

Fry the tortillas for a few seconds and set on top of paper towels to remove any excess oil.

Step 

Coat the tortillas into the mole sauce and transfer to a serving plate

Step 

Add shredded chicken, onion and crumbled queso fresco and roll or fold in half

Step 

Top with, sliced onion, crumbled queso fresco. and sesame seeds
